150 years ago
The pioneers in the Salt Lake Valley were full of anxiety about the scarcity of provisions during the spring of 1848, according to A Comprehensive History of the Church 3:329. Until crops could be harvested, the colonizers of the new frontier were dangerously destitute.
Hunger drove many to eat the earliest vegetation. The sego lily, with a bulbous root, was found to be palatable and nutritious. For its role in providing nourishment during crucial times, the sego lily was voted the Utah state flower in 1911.
