Research to examine long-term food storage

The BYU Center for Long-term Food Preservation and Storage is doing research on the quality of food after long-term storage. Church members who have food storage meeting the following criteria are invited to donate to this research effort. The criteria are:

  • Stored at least 5 years.

  • Packed in sealed cans in a reduced oxygen environment (nitrogen flushed or oxygen absorbers).

  • Stored in the same location for duration of storage time.

  • Not stored at high temperatures (such as attic or garage).

  • Storage time can be determined (from can code or date written on can).
